Pasta Fajita Casserole

So last night I felt cheesy ^_^! I ended up making a sort of casserole for dinner and it was awesome. If your a fan of the southern favorite chicken spaghetti you'll love this.This casserole was full of yummy bell peppers (which they'll never eat alone) and my children loved it they came back for seconds and my husband went back for thirds and fourths so I knew I had to post this one. To make this you will need the following!  
1 bag of grill ready fajita chicken
1 package of wheat rotini (or any other pasta you'd like to have)
2 red bell peppers
2 green bell peppers
2 yellow bell peppers
1 sweet onion
1 red onion
1 can of rotell
1 package of Velveeta cheese (it was the small bar)
1 small can of cream of chicken soup
Chicken broth (add till desired density is reached)


Ok now that you have all that what I did was start by cooking the pasta. While I was waiting for that to cooker with a Reynolds slow cooker liner (for fast clean up) and set it on high. I then cut up my cheese into little cubes and added them to the slow cooker along with the can of cream of chicken the can of Rotell and the whole package of grill ready fajita meat. I then chopped up all my veggies (the peppers and onions) and added them to the slow cooker as well. I checked and mixed it often until all the cheese was melted then I added my broth until the mixture was at a density I was comfy with! By this time the noodles were already done and drained and just needed to be added! I add the noodles and let the mixture continue to cook but I have now changed my settings to low. This could be made a lot quicker in a pot however while cooking I tend to get a lot of the cleaning and other housework out of the way. The slow cooker allows me ample time to multi task considering there is a lot to be done after school (full time student) and work (full time employee) there is a lot that needs to be done by the time I get home! Whelp now that the house is tiddy Ive cleaned up the mess that I made preparing and cooking and the kids have that im hungry look in their eyes DINNER IS SERVED! Throw a little side salad and some bread sticks with it and whaaaala a hit!
